French Onion Soup

Ingredients-

  • 2 – 3 large onions 
  • 500 ml chicken broth 
  • 60 g grated cheese (Gruyere or Comté cheese) 
  • Knob of butter 
  • Salt and pepper 
  • A few slices of farmhouse bread 

Directions- 

  1. Peel and finely chop the onions. Sauté the onions in a knob of butter until golden brown. 
  2. Add the chicken broth, then salt and pepper. 
  3. Simmer for 20 to 30 min. 
  4. Toast the bread slices and cut into medium-sized chunks. 
  5. Pour the soup in the Gratin bowls. Place the toasted bread chunks on top and sprinkle over the grated cheese. 
  6. Grill in the oven at 200°C for a few minutes. 
  7. Serve immediately. 

Tip: You can also deglaze the onions with white wine before adding the chicken broth. And for more flavor, add a bouquet garnish to the chicken broth.
